About: San Diego Distillery is located due east of San Diego in the heart of Spring Valley. The small, cutting edge distillery produces artisanal bourbon, brandy, and true craft whiskeys. Currently, private tours and tastings are available only by appointment.
San Diego Distillery uses a strict distillation and aging process to produce their artisanal spirits. After careful distillation, spirits are stored in either sauvignon blanc wine barrels or new white oak casks to mature, giving them delicate aromas and flavors.
What I Tasted: I had an amazing tasting with Trent Tilton, master distiller, of four single malt whiskeys during my visit to the distillery. All four were flavorful, high-quality, grain-to-glass whiskeys. I was particularly impressed with the bourbon, made with 49% Vienna malt and 51% corn, and the scotch, made with peated malt. The peated malt, which gives the scotch an interesting smoky flavor, is imported from Islay, Scotland.
Likes: I’m still thinking about the peated scotch I tasted. It is quite special, and I would like to taste it again and learn more about it. I thoroughly enjoyed meeting Trent Tilton, and the education he provided while I tasted his creations, was enlightening.
The Verdict: For one of the best craft whiskeys San Diego has to offer right now, make an appointment with San Diego Distillery for a tour and tasting. Highly recommended.
