The California Spirits Company
Along one wall of the distillery are six, 325-gallon polypropylene fermentation tanks. Opposite the big tanks are the distillery’s two stills: a custom-designed 100-gallon pot still made in Germany by Müller GmbH, and a smaller, stainless steel pilot still for developing new products and extracts. Next to the stills sits the system for producing carbon-filtered water used at the distillery.
Entrance to the distillery is through the small, but beautiful tasting room, adorned with a 3-D seaplane landing in a mural of Catalina’s Avalon Harbor on one wall. The seaplane is the company’s logo and reflects the soul of the distillery– precision engineering.
Established in 2013, the distillery started producing Avalon Silver Rum in December, 2014, and won awards and high ratings for it three months later. Currently, the distillery is producing an improved version of the original rum, called Innovo White Rum (80 proof), a maple carbon-filtered silver rum. Plans for making additional spirits, i.e., vodka, whiskey, and bourbon, are in the works.
What I Tasted: Avalon Silver Rum (80 proof). This small batch rum was distilled six times from molasses. Appearance: crystal clear. Nose: a pleasant bouquet of molasses and alcohol vapors. Palate: light in body, smooth and clean, nice flavor with caramel and banana notes.
Likes: Delicious rum and cocktails. Beautiful tasting room, well-designed and constructed distillery, and informative tour by Casey was a plus. California Spirits is conveniently located near Highway 78 and South Twin Oaks Valley Road.
The Verdict: Highly recommended. A wonderful experience touring the first craft distillery in North San Diego County, talking with Casey Miles, and tasting quality rum.
