About: What started out as Manuel Antonio Brewing in tropical Costa Rica is now Pure Project Brewing in sub-tropical San Diego. The stars aligned perfectly when founders Mat Robar and Jesse Pine decided to move the brewery north, the Brewery Igniter had a turnkey 7-barrel brewhouse for lease, and master brewer Winslow Sawyer moved to San Diego from Santa Cruz.
Jesse and his wife Agi brought the Pura Vida spirit and their recipes back with them and returned to their former home to open the brewery. “We’re all about quality and making great beer,” Mat told me when I visited the trio of beer entrepreneurs at the brewery.”
When they start production, Pure Project will be brewing high-end, premium beers made from high-quality ingredients. “Our philosophy is details matter,” said Jesse. “We’ll be making refreshing beers that are drinkable and unique by using both locally and globally sourced ingredients.”
Winslow talked about how the brewery would eventually make some barrel-aged beers with these ingredients, as sours are one of his specialties. “For me, beer is an art form,” said Winslow. “We want to create beers with a story, highlighting the agricultural processes, people, and ingredients involved in the making of the beer in your glass. I want to make artisanal, well-balanced beers using the vast array of unique ingredients available, like tropical fruits, spices, and vanilla beans. All without using chemicals in the process. Just “Pure” beer.”
“At the same time we aspire to follow the philosophy of Yvon Chouinard, the founder of Patagonia,” Mat added, “in that we aim to be an environmentally friendly brand carefully operating this brewery to reduce our impact.”
Mat and the team often sojourn to surf, climb, ski, backpack and explore the wonders of nature. The team plans to take “sourcing trips” in order to bring back unique ingredients to the brewery for Jesse and Winslow to use in their beers.
Pure Project has partnered with the local Surfrider Foundation and looks to support their initiatives as part of their service to the community. The brewery plans on finding other ways to integrate with the community as well, but Surfrider Foundation was a no-brainer.
“We aim to create a destination for both locals and beer travelers alike to come and taste what globally-sourced beers are all about,” continued Mat. “And while they are here we’ll tell the story of the beer in their glass.”
Likes: A beautiful new brewing concept that practices Pura Vida, follows the business philosophy of Yvon Chouinard, and aspires to sustainable brewing methods. The location is great and the parking is plentiful. I’m looking forward to drinking pure, clean beers produced at Pure Project.
The Verdict: Highly recommended. Pure Project will soon be a destination brewery for discerning craft beer drinkers. They have a healthy brewing philosophy, expertise, and drive to do great things in San Diego’s beer scene. I predict the beers made here will be worth traveling for.
