About: After many years of planning SpecHops Brewing Company, ace home-brewer-turned-professional David Casperson and his wife Stephanie finally held their brewery’s Grand Opening Weekend last March 24th-26th.
Located inside a cavernous warehouse in Rancho Vista Business Park in Vista, the military-themed brewery is currently serving five clean and delicious beer styles: Session IPA, Pale Ale, Stout, Black IPA, and Saison.
There is plenty of room to enjoy those beers and lots of seating. The tasting room has full view of the 15-barrel brewhouse from picnic benches, bar stools, and standing when it gets crowded. There is a large HDTV near the bar for watching sports, and several games like Giant Jenga and Cornhole to play.
One interesting aspect to the brewery is what they call a “Story Room,” where veterans, military personnel, first-responders, and surviving family members are encouraged to record their “Sea Stories,” by recounting their service from “battles and events gone by.”

What I Drank: Jedburgh (5.0% ABV) Saison, a very nice beer brewed to style: clear, pale gold color; fruity (orange), floral, spicy (coriander, pepper) aroma; flavor similar to aroma; effervescent with a crisp, clean, dry finish. If you like Saisons, you will like Jedburgh, named for World War Two’s Operation Jedburgh.
Likes: Meticulously kept brewery, well-made beers at reasonable prices. I thoroughly enjoyed the pint of Jedburgh Saison ($6.00) I drank. Knowledgable staff. Great service. Dog friendly. Clean restrooms.
The Verdict: Recommended. A new craft brewery in Vista producing well-made beers to satisfy any beer-lover’s tastes. Beers and service were excellent and worth traveling for.Share This:
